Dukkah Hummus 4 Ways:
Cheats Sweet Potato Hummus with Dukkah, Chili Oil, and Smoked Paprika
INGREDIENTS:
1 lb. 2-3 sweet potatoes, roasted
1 250g tub store-bought hummus
½ tsp smoked paprika
1 tbsp chili oil for drizzling
2-3 tbsp of your favourite Zambonelli Dukkah
Microgreens for garnish
Preparation Directions:
Preheat oven to 400F.
Poke sweet potatoes (skin on) with a fork, place on a baking sheet.
Cook for 30 – 45 mins.
Let cool then peel off skin.
Place hummus and sweet potatoes in a food processor and process until smooth.
Spoon hummus onto a serving plate, top with the chili oil, paprika and Dukkah. Garnish with the greens and serve with pita or crackers.
Cheats Beet Hummus with Dukkah and Yogurt
INGREDIENTS:
1x 250g tub store-bought hummus
1x 225g canned beets, drained – save one and slice for garnish
¼ cup thick yogurt
2-3 tbsp of your favourite Zambonelli Dukkah
Micro greens for garnish
Preparation Directions:
Place the beets and hummus in a food processor and process until smooth.
Place hummus in a bowl or on a plate. Top with the yogurt, then sprinkle with the Dukkah and garnish with extra slices of beets and the microgreens.
Cheats Pea Hummus with Dukkah and Mint
INGREDIENTS:
1 250g tub store-bought hummus
2 cups frozen peas, cooked and cooled
2-3 tbsp Zambonelli Dukkah (Pistachio is good with this one)
Olive oil to drizzle
Mint leaves, chopped
Pea tendrils for garnish
Optional - sliced radish
Preparation Directions:
Place the peas and hummus in a food processor and process until smooth.
Place hummus in a bowl or on a plate.
Drizzle with olive oil, sprinkle on the Dukkah, then garnish with the mint and pea tendrils. You can also add some sliced radishes for colour.
Dukkah Dressed Hummus
This is a great way to elevate a simple dip into something exotic.
Ingredients:
1 Tub Store Bought Hummus
¼ Cup of your favourite Zambonelli Dukkah
Olive Oil
Baguette, Pita, or Chopped Vegetables
Preparation Directions:
Spread the hummus in a shallow dish. Drizzle olive oil over the hummus and then sprinkle the Dukkah over top.
Serve with slices of bread or pita, or vegetables.
