Dukkah Lentil Burger with Zucchini Ribbons
Serves 4-6
PATTIES:
¼ cup (160g) extra virgin olive oil
1 small onion finely chopped
2 cloves garlic, crushed
1 tsp dried chilli flakes
400g can brown lentils, rinsed, drained and roughly mashed
2 cups (210g) bread crumbs
¼ cup (60ml) milk or other liquid
1 egg
½ cup of your favourite Zambonelli Dukkah
TO SERVE:
4-6 brioche buns
Hummus
Thinly sliced or spiralized zucchini
Sliced tomatoes
Sweet chili jam
Cheese slices of your choice
Preparation Directions:
To make the patties, heat 1 tablespoon of the oil in a large, non-stick frying pan over high heat. Add the onion and garlic and cook for 2-3 minutes or until soft. Set aside to cool.
Place the onion mixture in a large bowl with the Dukkah, chili, lentils, breadcrumbs, milk, egg, salt and pepper and mix to combine. Roll into balls and shape into patties.
Heat the remaining oil in the pan over medium/high heat and cook the patties for 2 minutes per side. Add the cheese and cook until melted.
To serve, spread the base of the bun with hummus, top with zucchini, tomato, patties, chili jam and then bun top.
