Green Bean Salad with Rapini and Dukkah
Serves 4
INGREDIENTS:
10 oz to a 1lb. green beans
½ bunch rapini or broccoli
½ red pepper, cut into ¼ inch strips
½ purple onion, thinly sliced
½ fennel bulb , sliced (optional)
4 tbsp of your favourite Zambonelli Dukkah
3 tbsp olive oil
Juice of ½ a lemon
Salt and pepper to taste
Pinch of chili peppers (optional)
Preparation Directions:
Bring a large pot of salted water to the boil. Add beans, bring back up to the boil, then cook for 3 minutes.
Add the rapini and cook for another 2 minutes.
Drain, rinse under cold running tap water to cool. Shake off excess water well, then pat dry. Transfer to bowl.
Heat 1 tablespoon olive oil to a medium skillet over medium heat. Add the red peppers, onion and fennel (if using) and saute for a couple minutes.
Add a couple tablespoons of Dukkah to bring out the flavour.
Add the pepper mixture to the beans and rapini, toss with the remaining olive oil, lemon juice, Dukkah, salt and pepper and a pinch of chili pepper if you want. Toss together and serve. This can be served hot or cold.
